Popeye Breakfast. Spinach and poached egg on toast

Tasty and nutritious breakfast

INGREDIENTS
1 tsp olive oil
1 large handful spinach
1 whole nutmeg, for grating
Chilli flakes
1 free-range egg
white wine vinegar
sea salt
1 slice rye bread toasted
METHOD
Half-fill a pan with boiling salted water, and bring it to a light simmer over a medium heat. Add a splash of white wine vinegar and gently pour the egg into the simmering water in one fluid movement. Cook for 3 minutes
Heat the oil in a pan over a medium heat, add the spinach and nutmeg Place the lid on and cook on low heat for 1-2 minutes.
Place the spinach on the toast, top with the egg and add sprinkle of chilli flakes
